2 tablespoons powdered coconut milk
1 cup water
1/2 cup rice flour
1/2 cup oat flour
1/2 cup coconut flour
2 tablespoons chia
1 teaspoon salt
Seasoning of your choice to taste (curry, paprika, lemon pepper, garlic powder etc.)
In a blender mix the powdered coconut milk and water.
In a separate bowl combine the eggs, rice, oat, and coconut flour, chia,
salt, and savory seasoning and beat with a fork or whisk until smooth.
Add the coconut powder mixture from the blender to the bowl and combine.
Grease a waffle maker with coconut oil. Allow it to heat and add
approximately one cup of waffle mix to the bottom half, spreading it evenly
to the edges. Cook until brown on both sides, anywhere from 5-10 minutes
depending on your waffle maker. Carefully remove. Top with sautéed
mushrooms, pesto, caponata, or any other savory topping of your choice.
