Dairy Free & Gluten Free Apple Cake

2 medium apples, peeled and diced
1 tablespoon freshly grated or ground ginger
1/2 cup coconut flour
1/2 cup coconut sugar
1/4 cup coconut oil
1 teaspoon ground cinnamon
1 teaspoon baking powder
Preheat the oven to 400 degrees.
Whisk together the eggs and coconut oil and then add the diced apples.
In a separate bowl, combine all the dry ingredients except the baking powder.
Gently incorporate the wet ingredients into the dry ingredients.
Once combined, add the remaining teaspoon of baking powder to the mixture. The dough should appear more dry than moist.
Spread the dough into a small greased cake pan and bake for 40 minutes.
