Bananas with Cinnamon & Coconut Oil

8 ripe bananas
4-6 tablespoons of coconut oil (in melted form)
honey or sugar (optional)
Preheat the oven at 425 F°.
Remove the skin and halve the bananas crosswise.
Next, thinly slice the banana halves lengthwise.
Arrange the slices in a single layer on a baking sheet.
Brush a liberal amount of coconut oil onto the banana slices and sprinkle with cinnamon.
If using, drizzle honey or sprinkle sugar for added sweetness.
Roast at 425 F° for 30 minutes or until a golden-brown color develops, flipping the bananas halfway.
